echon baboy (roast pork), or as the locals call it, “litson baboy” (pig roast), is a popular dish in the Philippines. It’s usually prepared by marinating and roasting whole pig cooking over a charcoal fire until crispy and golden brown on all sides, then marinading the skin with soy sauce to balance out its flavours
